Ginger + Hibiscus Watermelon Pops

During the warm days of summer, we like to indulge in herbal popsicles. Making your own popsicles provides instant refreshment, while also fortifying you with a little plant power. When researching other plant-powered popsicles, we consulted Half Baked Harvest’s Hibiscus and Minty Watermelon Popsicle recipe, making a few medicinal twists of our own by adding in our organic Ginger tea and organic Hibiscus tea. These sweet and semi-spicy herbal additions will zap you right out of a heat fog, all while providing a fast and healthy treat.

Ginger rhizome (Zingiber officinale) has been used in traditional medicine practices, like Ayurveda and Traditional Chinese Medicine, for over 2,000 years and is loved the world over for its remarkable digestive benefits.* Ginger loves heat and humidity, and flourishes in subtropical or tropical climates. Hibiscus also flourishes in tropical climates, and is known for its tarty and tangy taste, as well as its ability to support cardiovascular health.*

This zesty hot-weather remedy is easy to make and almost too simple to eat! Better yet, they are made entirely with whole foods, so you can enjoy without feeling guilty.

Ginger + Hibiscus Watermelon Pops

This zesty hot-weather remedy is easy to make and almost too simple to eat.

Servings: 16 Popsicles

Time: 20-25 minutes of prep, plus 4 hours of freeze time

Materials:

  • 3 sets of popsicle molds or 16 x 3-oz. paper cups with wooden sticks
  • Large tea cup with a cover
  • Tea kettle
  • Blender

Ingredients:

  • 1 cup of water
  • 4 cups of fresh watermelon, seeds removed
  • 2 teabags of organic Hibiscus tea
  • 1 bag of organic Ginger tea
  • ¼ cup of local organic honey; add more for extra sweetness
  • 2-3 limes, juiced

Instructions:

  1. Bring water to a boil.
  2. Place all three tea bags into the tea cup (two hibiscus teas and one ginger) and pour in the hot water, cover and steep for 15 minutes.
  3. Add the tea to the blender, along with lime juice, honey, and freshly scooped watermelon.
  4. Blend, and then pour the mixture into popsicle molds. If you are using small paper cups as molds, allow the mixture to freeze for an hour before adding wooden popsicle sticks, and then place the pops back into the freezer.
  5. Popsicles will need to sit in the freezer overnight, or for four to five hours minimum.
  6. Enjoy these ruby red popsicles at a summer barbeque, pool party, or anytime you need a cooling summer treat.
